Enzymatic hydrolysis of cuttlefish (Sepia officinalis) and sardine (Sardina pilchardus) viscera using commercial proteases: Effects on lipid distribution and amino acid composition ArchiMer

Total lipid and phospholipid recovery as well as amino acid quality and composition from cuttlefish (Sepia officinalis) and sardine (Sardina pilchardus) were compared. Enzymatic hydrolyses were performed using the three proteases Protamex, Alcalase, and Flavourzyme by the pH-stat method (24 h, pH 8, 50 degrees C). Three fractions were generated: an insoluble sludge, a soluble aqueous phase, and an oily phase. For each fraction, lipids, phospholipids, and proteins were quantified. Quantitative and qualitative analyses of the raw material and hydrolysates were performed. Gas chromatographic behavior of fatty acid derivatives for mass spectrometry on low-polarity capillary columns ArchiMer

The gas chromatographic properties of four derivatives of fatty acids (FA), namely fatty acid methyl esters, picolinyl esters, N-acyl pyrrolidides and 4,4-dimethyloxazoline derivatives, which contain various structural features (double bonds, branching, hydroxyl group) in their acyl chains have been compared on a low-polarity capillary column with a mass spectrometer as detector. Temperature programming rates yielding the highest resolution were optimized for each derivative by means of computer-assisted column temperature optimization software. Indeed, the Drylab software represents a valuable assistance for estimating the optimum analysis conditions. Time and efforts required for such method development can greatly be reduced. Lipid composition of the liver oil of the ray, Himantura bleekeri ArchiMer

If rays are traditionally fished for their caudal fins, the rest of the body is wasted, except part of the skin that can be transformed into leather. Liver oil of the ray, Himantura bleekeri, was characterized in terms of lipid class composition and fatty acid profile. Liver oil content was high and represented 54% of the liver weight (w/w). Neutral lipids were predominant (92%), major components being triacylglycerols (63%). Other neutral lipids identified were hydrocarbons, sterol esters, mono- and di-acylglycerols, free fatty acids, sterols and glyceryl ethers. Quality differences of gilthead sea bream from distinct production systems in Southern Europe: Intensive, integrated, semi-intensive or extensive systems ArchiMer

The quality of gilthead sea bream from distinct production systems and geographical locations in Southern Europe was evaluated to differentiate aquaculture products from extensive, integrated and semi-intensive systems from the ones produced intensively. This work analysed the external appearance of fish, yields after filleting as well as nutritional, sensory and histological characteristics of the muscle. The results showed that the yellow-golden line between eyes and the shiny red spot on the gill cover can be important and easy criteria to discriminate aquaculture products. Trimming losses are higher in fish from intensive systems. Lipid content of fish from extensive systems was significantly lower than values observed for fish reared intensively....

Seasonal variation of physical, chemical and sensory characteristics of sea bream (Sparus aurata) reared under intensive conditions in Southern Europe ArchiMer

This study describes the variability of important quality traits in gilthead sea bream produced under intensive conditions in Southern Europe and purchased in a French market (Nantes). Chemical, sensory and histological characteristics were performed on 18 samples delivered over a year. All fish presented far lower dioxin and DL-PCBs or heavy metals concentrations than the maximum limit level set by EC Regulation, being totally safe for human consumption. Fat content and nutritional values reflected by n-3 and n-6 polyunsaturated fatty acids (PUFA) levels were parameters with high variability according to the season or the fish farm. Trois ans après l'"Amoco-Cadiz" : Hydrocarbures persistants dans les huîtres et cinétique d'épuration - Contrat CNEXO n° 80/6317 ArchiMer

L'accident de l'"Amoco-Cadiz"le 16 mars 1978 est venu compromettre gravement les activites ostréicoles implantées en Bretagne nord et plus spécialement dans l'Aber Benoît, l'Aber Wrac'h et la baie de Morlaix. Malgré l'importance de la contamination, il est vite apparu que sur les huîtres les mortalites dues au petrole étaient insignifiantes et les consequences sur la physiologie des animaux restaient mineures. Par contre, du fait de l'aptitude de ces coquillages à concentrer les hydrocarbures presents dans l'eau et les matières solides en suspension, on a très vite atteint des concentrations en petrole interdisant la commercialisation de ces produits avec toutes les consequences économiques qui en resultent.
